Mexican Pizza (Taco Bell Copycat Recipe)

Make a homemade version of the classic fast-food Mexican Pizza. This recipe uses flour or corn tortillas layered with seasoned ground beef, refried beans, and cheese, offering a fun family meal you can prepare at home.

Ingredients
  

Tortillas
  • 8 count flour tortillas or corn tortillas
Filling
  • 1 lb ground beef
  • 2 tablespoon taco seasoning
  • 1/4 cup water
  • 4 tablespoon enchilada sauce
  • 8 ounce refried beans 1/2 can
  • 1/2 cup shredded cheese cheddar, mozzarella or Mexican cheese blend
Topping
  • 4 tablespoon enchilada sauce
  • 1/2 cup shredded cheese cheddar, mozzarella or Mexican cheese blend
Garnishes (optional)
  • 1 count tomato roma or beefsteak, seeds removed and diced
  • 1 small red onion diced
  • 1/4 cup black olives
  • 1/4 cup sour cream
  • 2 count green onions finely diced

Equipment

  • Large frying pan or skillet
  • Air Fryer
  • Sheet pan

Method
 

  1. In a large frying pan or skillet on medium heat add the ground beef. Use a spatula or spoon to break up the meat into small pieces as it cooks. Sauté for about 5 to 8 minutes or until the meat is cooked through. Remove grease from the pan.
  2. Add in the taco seasoning, water, and enchilada sauce. Stir until evenly combined. Let simmer for 1 to 2 minutes.
  3. To assemble the pizzas, spread a layer of refried beans on one tortilla. Then top with ground beef. Add a layer of cheese and top with another tortilla.
  4. Spread 1 tablespoon of enchilada sauce on top of the tortilla and top with shredded cheese to evenly cover the top.
  5. Repeat with remaining tortillas to assemble all the pizzas.
  6. AIR FRYER COOKING METHOD: Preheat Air Fryer to 400°F. Working in batches (your air fryer fits one pizza at a time) carefully place the pizza in the air fryer and cook for about 5 minutes, or until the cheese melts and the tortillas are crispy. Repeat with remaining pizzas.
  7. OVEN BAKING METHOD: Preheat oven to 350°F. Line a sheet pan with tin foil or parchment paper for easier clean up (optional). Arrange the pizzas on the sheet pan leaving a space between them. Bake for 8 to 10 minutes or until the cheese is melted and the tortillas are crispy.
  8. PAN FRYING METHOD: In a large frying pan with a lid, on medium heat add a splash of oil to coat the pan. Add one pizza at a time and cover with the lid. Cook for 4 to 5 minutes or until the cheese melts and the bottom tortilla is crispy.
  9. Transfer the cooked pizzas to a serving plate and top with the optional garnishes – tomatoes, red onion, olives, sour cream, and green onion. Serve.
