Method
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together the chicken broth, lemon juice, honey, minced garlic, oregano, garlic powder, salt, and pepper.
- Pat the chicken thighs dry with paper towels. Place them in the large oven-safe skillet and drizzle with olive oil. Season with salt and pepper.
- Pour the lemon sauce mixture over the chicken in the skillet.
- Place the skillet in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
- Remove from the oven. Garnish with lemon slices and fresh parsley before serving.
