One Pan Lemon Chicken

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Lemon Sauce
  • 1/4 cup chicken broth
  • 2 tbsp lemon juice freshly squeezed
  • 1 tbsp honey
  • 1 clove garlic minced
For Serving
  • 1 lemon sliced, for garnish
  • 2 tbsp fresh parsley chopped, for garnish

Equipment

  • Large oven-safe skillet

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together the chicken broth, lemon juice, honey, minced garlic, oregano, garlic powder, salt, and pepper.
  3. Pat the chicken thighs dry with paper towels. Place them in the large oven-safe skillet and drizzle with olive oil. Season with salt and pepper.
  4. Pour the lemon sauce mixture over the chicken in the skillet.
  5. Place the skillet in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
  6. Remove from the oven. Garnish with lemon slices and fresh parsley before serving.

Notes

Serve with your favorite side dishes like rice, quinoa, or a simple salad.
