One Pot Taco Pasta

A simple and flavorful one-pot taco pasta recipe perfect for weeknight dinners.

Ingredients
  

For the Pasta
  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 ounce, undrained
  • 1 can taco seasoning 1 ounce
  • 4 cups beef broth
  • 2 cups uncooked pasta such as rotini or penne

  • 1 cup shredded cheddar cheese
  • sour cream
  • chopped cilantro

  • Large pot or Dutch oven

Method
 

  1. In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is softened, about 5 minutes.
  3. Stir in the diced tomatoes (with their juice), taco seasoning, and beef broth. Bring the mixture to a boil.
  4. Add the uncooked pasta to the pot. Stir to combine. Reduce the heat to medium-low, cover, and simmer for 15-20 minutes, or until the pasta is cooked through and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
  5. Remove from heat. Stir in the shredded cheddar cheese until melted. Serve hot with your favorite toppings.

Notes

You can adjust the amount of taco seasoning to your preference. For a spicier dish, add a pinch of cayenne pepper or some diced jalapeños with the onions.
