Ingredients
  

For the Oats
  • 1/2 cup rolled oats
  • 1/2 cup milk dairy or non-dairy
  • 1/4 cup Greek yogurt
  • 1 tablespoon chia seeds
  • 1 teaspoon maple syrup or to taste
For the Peach Crisp Topping
  • 1/2 cup peaches fresh or frozen, diced
  • 1 tablespoon rolled oats
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg optional
  • 1 teaspoon butter melted

Method
 

  1. In a jar or container, combine the 1/2 cup rolled oats, 1/2 cup milk, 1/4 cup Greek yogurt, 1 tablespoon chia seeds, and 1 teaspoon maple syrup. Stir well to combine.
  2. In a separate small bowl, mix together the 1/2 cup diced peaches, 1 tablespoon rolled oats, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg (if using), and 1 teaspoon melted butter.
  3. Pour the peach crisp topping mixture over the oat mixture in the jar. Stir gently to incorporate some of the peaches into the oats, or leave it layered on top.
  4. Cover the jar and refrigerate for at least 8 hours, or overnight.
  5. In the morning, stir the oats and enjoy cold.

Notes

You can adjust the sweetness to your preference. If using frozen peaches, thaw them slightly before dicing.
