Method
- In a jar or container, combine the 1/2 cup rolled oats, 1/2 cup milk, 1/4 cup Greek yogurt, 1 tablespoon chia seeds, and 1 teaspoon maple syrup. Stir well to combine.
- In a separate small bowl, mix together the 1/2 cup diced peaches, 1 tablespoon rolled oats, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg (if using), and 1 teaspoon melted butter.
- Pour the peach crisp topping mixture over the oat mixture in the jar. Stir gently to incorporate some of the peaches into the oats, or leave it layered on top.
- Cover the jar and refrigerate for at least 8 hours, or overnight.
- In the morning, stir the oats and enjoy cold.
Notes
You can adjust the sweetness to your preference. If using frozen peaches, thaw them slightly before dicing.
