Ingredients
  

For the Brie
  • 1 wheel Brie cheese about 8 ounces
  • 1/4 cup pecans chopped
  • 2 tablespoons honey plus more for drizzling
For the Peaches
  • 2 medium peaches pitted and sliced
  • 1 tablespoon butter
  • 1 tablespoon brown sugar
For Serving
  • 1 bag baguette sliced

Method
 

  1. Preheat your oven to 375°F (190°C). Place the brie on a baking sheet.
  2. In a small skillet, toast the chopped pecans over medium heat for 3-5 minutes until fragrant. Remove from heat and set aside.
  3. Melt the butter in the same skillet over medium heat. Add the sliced peaches, brown sugar, and 2 tablespoons of honey. Cook for 5-7 minutes, stirring occasionally, until the peaches are softened and slightly caramelized.
  4. Place the brie in the preheated oven and bake for 10-12 minutes, or until it is soft and gooey in the center.
  5. Remove the brie from the oven. Top with the cooked peaches and toasted pecans. Drizzle with additional honey.
  6. Serve immediately with sliced baguette for dipping.

Notes

You can substitute other stone fruits like nectarines or plums for the peaches. For a spicier kick, add a pinch of cinnamon or nutmeg to the peaches while cooking.
