Pumpkin Yogurt Parfaits

Ingredients
  

For the Parfait Mixture
  • 1 15-ounce can pumpkin puree or scant 2 cups homemade
  • 1 1/4 cup Greek yogurt
  • 3-4 tablespoons mascarpone cheese
  • 1 tablespoon vanilla extract
  • 2 1/2 tablespoons brown sugar
  • 1 1/2-2 teaspoons ground cinnamon
  • 1/4 teaspoon nutmeg
For Topping
  • 2 tablespoons honey or molasses more for garnish
  • chocolate chips for garnish
  • chopped hazelnuts or walnuts for garnish

Equipment

  • Large mixing bowl
  • Hand electric mixer or whisk
  • Small serving goblets or mason jars

Method
 

  1. Place the pumpkin puree, Greek yogurt, mascarpone cheese, vanilla extract, brown sugar, cinnamon, and nutmeg in a large mixing bowl.
  2. Using a hand electric mixer or a whisk, mix together until you reach a smooth consistency.
  3. Taste the mixture and adjust the flavor as needed. You can add more molasses or brown sugar for sweetness, or adjust the spices for a stronger cinnamon or nutmeg flavor. Mix again to combine.
  4. Transfer the pumpkin-yogurt mixture to small serving goblets or mason jars. Cover and refrigerate for at least 30 minutes, or preferably overnight.
  5. When ready to serve, top each parfait with a drizzle of molasses, chocolate chips, and chopped hazelnuts or walnuts.

Notes

These parfaits are an excellent make-ahead option for busy mornings. They provide a good source of protein and can be customized with your favorite toppings.
