Quick Cajun Chicken Alfredo

Ingredients
  

For the Chicken
  • 2 boneless, skinless chicken breasts chicken breasts cut into bite-sized pieces
  • 1 tablespoon Cajun seasoning adjust to taste
  • 1 tablespoon olive oil
For the Alfredo Sauce
  • 8 ounces fettuccine pasta
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • 1.5 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • Pinch salt

  • Pot

Method
 

  1. Cook fettuccine pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta is cooking, season chicken pieces with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  4. Pour in heavy cream and bring to a simmer. Stir in grated Parmesan cheese, black pepper, and salt. Cook, stirring, until the sauce thickens, about 3-5 minutes.
  5. Add the cooked chicken back to the skillet with the sauce. Stir to combine.
  6. Add the drained fettuccine to the skillet. Toss to coat the pasta with the sauce. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
  7. Serve immediately.

Notes

Garnish with fresh parsley or extra Parmesan cheese if desired.
