Quick Ground Turkey and Pepper Skillet

This recipe shows you how to cook ground turkey with peppers and onions for a fast, healthy dinner. It is a simple skillet meal suitable for weeknights.

Ingredients
  

  • 3 tablespoons Extra virgin olive oil divided
  • 1 cup Chopped yellow onion
  • 1 Chopped greens from green onions optional
  • 1 Bell pepper (red or yellow preferred), chopped
  • 2 cloves Garlic, minced
  • 1 pound Ground turkey, preferably ground turkey thighs
  • 1 teaspoon Chipotle powder or chili powder or to taste
  • 2 tablespoons Chopped fresh parsley or cilantro
  • Kosher salt to taste

Method
 

  1. Heat 2 tablespoons olive oil in a large skillet on medium high heat. Add the chopped onions and bell pepper and cook until onions and peppers are softened, about 2 minutes.
  2. Add the garlic and cook for 30 seconds more.
  3. Push the vegetables to one side of the pan. Position that side of the pan off the burner, away from the heat. The empty part of the pan should be over the burner.
  4. Add one or two more tablespoons of oil to coat the empty part of the pan. Put crumpled chunks of ground turkey in the pan, and sprinkle with salt and chipotle or chili powder.
  5. Cook the turkey without stirring until it is browned on one side. Turn the pieces over to brown the other side.
  6. Once the turkey is just cooked through, stir in the onions and peppers. Sprinkle with more salt and chili powder to taste. Remove the skillet from the heat.
  7. Stir in the fresh chopped parsley or cilantro.
  8. Serve the skillet mixture alone, or with steamed rice or noodles.
