Red White and Blue Icebox Cake

Ingredients
  

For the Cake
  • 2 packages Graham crackers about 18 crackers per package
For the Cream
  • 3 cups Heavy cream cold
  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla extract
For the Topping
  • 1 cup Fresh blueberries
  • 1 cup Fresh strawberries sliced
  • 1 cup Fresh raspberries

Equipment

  • 9x13 inch baking dish
  • Electric mixer
  • Spatula

Method
 

  1. Line the bottom of a 9x13 inch baking dish with a single layer of graham crackers. Break crackers as needed to fill gaps.
  2. In a large bowl, beat the cold heavy cream with an electric mixer on medium-high speed until soft peaks form.
  3. Gradually add the powdered sugar and vanilla extract, and continue beating until stiff peaks form.
  4. Spread half of the whipped cream mixture evenly over the graham crackers.
  5. Arrange half of the blueberries, strawberries, and raspberries over the whipped cream.
  6. Add another layer of graham crackers, breaking them to fit.
  7. Spread the remaining whipped cream mixture over the second layer of graham crackers.
  8. Decorate the top with the remaining berries, arranging them in a pattern.
  9. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the crackers to soften and the flavors to meld.
  10. Slice and serve chilled.

Notes

You can substitute other berries like blackberries. Ensure all ingredients are cold for the best whipped cream texture.
