Ingredients
  

For the Green Beans
  • 1 lb fresh green beans trimmed
  • 2 tbsp oil e.g., vegetable or canola
  • 3 cloves garlic minced
  • 2 tbsp soy sauce or tamari for gluten-free
  • 1 tbsp toasted sesame seeds for garnish

Method
 

  1. Bring a large pot of water to a boil. Add the green beans and cook for 3-4 minutes, or until they are about halfway cooked. This is called blanching.
  2. Drain the blanched green beans. Heat the oil in a large frying pan or wok over medium-high heat.
  3. Add the blanched green beans and minced garlic to the hot pan. Stir-fry for 5-7 minutes, or until the beans are tender-crisp and start to brown.
  4. Pour in the soy sauce and stir for another 1-2 minutes to coat the beans evenly.
  5. Serve immediately, sprinkled with toasted sesame seeds.

Notes

For a make-ahead option, blanch the green beans up to a day in advance. After blanching, run them under cold water to stop the cooking process. Store them in an airtight container in the refrigerator. When ready to serve, finish cooking them in the frying pan as directed.
When selecting green beans, choose ones that are bright green, firm, and free of wrinkles or brown spots. Thinner beans are preferred and should snap when broken.
