Rich and Hearty Shepherd's Pie

Ingredients
  

For the Filling
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
For the Topping
  • 2 pounds potatoes, peeled and quartered
  • 1/4 cup milk
  • 2 tablespoons butter

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Boil the potatoes in a saucepan until tender. Drain and mash with milk and butter. Season with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain off any excess grease.
  4. Add chopped onion to the skillet and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
  5. Pour in beef broth and Worcestershire sauce. Stir in frozen peas, frozen corn, and dried thyme. Season with salt and pepper. Bring to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.
  6. Pour the beef mixture into a baking dish.
  7. Spread the mashed potatoes evenly over the beef mixture.
  8. Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbly.

Notes

For an extra layer of flavor, you can add a tablespoon of tomato paste to the beef mixture along with the broth. You can also sprinkle some shredded cheese over the mashed potatoes before baking.
