Sausage and Peppers Comfort Food

Ingredients
  

For the Sausage and Peppers
  • 1 lb Italian sausage sweet or hot, casings removed
  • 2 Bell peppers any color, sliced
  • 1 Onion sliced
  • 2 cloves Garlic minced
  • 1 tablespoon Olive oil
  • 1/2 teaspoon Dried oregano
Optional for Serving
  • Crusty bread
  • Cooked pasta or rice

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Remove the sausage from the skillet and set aside, leaving the drippings in the pan.
  2. Add the sliced bell peppers and onion to the skillet. Cook, stirring occasionally, until they begin to soften, about 5-7 minutes.
  3. Add the minced garlic and dried oregano to the skillet. Cook for 1 minute more until fragrant.
  4. Return the cooked sausage to the skillet. Stir everything together and season with salt and black pepper to taste.
  5. Reduce the heat to low, cover the skillet, and let it simmer for about 15-20 minutes, or until the peppers and onions are tender and the flavors have melded.
  6. Serve hot, on its own, or with crusty bread, cooked pasta, or rice.

Notes

You can adjust the amount of garlic and oregano to your preference. For a spicier dish, use hot Italian sausage and add a pinch of red pepper flakes.
