Sausage Breakfast Burritos

Make a batch of these sausage breakfast burritos for a quick and easy breakfast you can freeze and reheat.

Ingredients
  

For the Burritos
  • 1 pound Pork sausage bulk
  • 1 cup Potatoes diced small
  • 1/2 cup Onion chopped
  • 1/2 cup Bell pepper chopped
  • 6 Large eggs
  • 1/4 cup Milk
  • 1 cup Cheddar cheese shredded
  • 12 Large flour tortillas

  • Baking sheet
  • Large Bowl

Method
 

  1. Cook the sausage in a large skillet over medium-high heat until browned. Drain off any excess grease.
  2. Add the diced potatoes, chopped onion, and chopped bell pepper to the skillet with the sausage. Cook until the vegetables are tender, about 8-10 minutes.
  3. In a large bowl, whisk together the eggs and milk. Pour the egg mixture into the skillet with the sausage and vegetable mixture. Cook, stirring occasionally, until the eggs are set.
  4. Stir in the shredded cheddar cheese until melted.
  5. Warm the tortillas slightly to make them pliable. Spoon about 1/2 cup of the sausage, egg, and cheese mixture onto the center of each tortilla.
  6. Fold in the sides of the tortillas, then roll them up tightly to form burritos.
  7. Let the burritos cool completely on a baking sheet. Once cooled, wrap each burrito tightly in plastic wrap, then in aluminum foil. Store in the freezer for up to 3 months.
  8. To reheat, remove the foil and plastic wrap. Wrap the burrito in a damp paper towel and microwave on high for 1-2 minutes, or until heated through. You can also reheat in a 350°F (175°C) oven for about 20-25 minutes.

Notes

You can add other ingredients like black beans, corn, or salsa to your burritos before rolling.
