- Preheat your oven to 425 degrees F. Line a baking sheet with foil and coat it with non-stick spray.
- Arrange the broccoli on one side of the sheet pan, place the chicken breasts in the middle, and put the diced potatoes on the other side. Drizzle the chicken, broccoli, and potatoes with the olive oil. Season everything with the garlic powder, salt, and pepper. Make sure everything has space around it; crowding can increase the baking time.
- In a small dish, combine the cream of chicken soup, parmesan cheese, parsley, and garlic. Mix these ingredients together and spread the mixture over the chicken breasts.
- Bake for 22 to 25 minutes, or until the chicken is cooked through (165 degrees) and the potatoes are tender. If you want to brown the top of the chicken slightly, turn on the top broiler in the oven at the end. Remove the pan from the oven and let the chicken rest for about 5 minutes before slicing. Serve.
