Ingredients

For the Beef
  • 3 lbs beef chuck roast trimmed of excess fat
  • 1 packet au jus gravy mix
  • 1 packet dry onion soup mix
  • 1 cup water
For the Sandwiches
  • 6 hoagie rolls split lengthwise
  • 1 cup beef broth for dipping
  • 1/2 cup butter melted, optional
  • 1/2 cup provolone cheese slices optional

Equipment

  • slow cooker
  • Tongs
  • Forks
  • Baking sheet

Method

  1. Place the beef roast in your slow cooker.
  2. In a bowl, whisk together the au jus gravy mix, dry onion soup mix, and water. Pour this mixture over the beef roast.
  3. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender and easily shreds.
  4. Remove the beef from the slow cooker and place it on a cutting board. Use two forks to shred the meat. Return the shredded beef to the slow cooker and stir it into the juices.
  5. To assemble the sandwiches, spoon the shredded beef onto the bottom halves of the hoagie rolls. If using, top with provolone cheese.
  6. Place the assembled sandwiches on a baking sheet. You can lightly toast them under the broiler or in a toaster oven until the cheese is melted and bubbly.
  7. Pour the beef broth into a small bowl for dipping. Serve the sandwiches immediately with the beef broth for dipping.

Notes

For an extra layer of flavor, you can brush the split hoagie rolls with melted butter before toasting them. You can also add caramelized onions or sautéed mushrooms to your sandwiches.
