Ingredients

For the Cheese Ball
  • 16 ounces cream cheese room temperature
  • 1 cup Cheddar cheese shredded
  • 2 tablespoons spicy ranch dressing seasoning
  • 1/3 cup bell pepper finely chopped
  • 1/3 cup green onions sliced
For Coating and Garnish
  • 1.5 cups cheese puffs ground into powder
  • 1 cup cilantro for garnish
  • 1 bell pepper stem for garnish
  • as needed black olives cut into triangles for eyes and mouth, optional
  • as needed toothpicks for attaching olive pieces, optional
  • as needed chips, crackers, and/or crudites for serving

Equipment

  • Electric mixer
  • Blender
  • Rubber spatula
  • Plastic wrap
  • Rubber bands

Method

  1. Allow two 8-ounce packages of cream cheese to reach room temperature. Grind the cheese puffs into a powder using a blender and set aside.
  2. In the bowl of an electric mixer fitted with the paddle attachment, combine the room temperature cream cheese. Mix on medium speed, scraping down the sides with a rubber spatula as needed, until the cream cheese is smooth. Add the spicy ranch seasoning, shredded cheese, finely chopped bell pepper, and sliced green onions. Beat until well combined and the ingredients are evenly distributed.
  3. Lay a double layer of plastic wrap on your counter. Spread a layer of the ground cheese puffs onto the plastic wrap. Spoon the cream cheese mixture onto the cheese puffs. Use the plastic wrap to help shape the mixture into a ball. Add more ground cheese puffs and continue shaping the mixture into a ball. Cover the cheese ball completely with the cheese puff crumbs and ensure it is in a ball shape. Wrap the plastic wrap tightly around the cheese ball and press to seal. Add another layer of plastic wrap tightly around the cheese ball. Use doubled rubber bands to create indentations for the pumpkin shape. Chill overnight.
  4. Before serving, carefully remove the rubber bands. Use the bell pepper stem as the stem for the pumpkin. Garnish with fresh cilantro. If desired, attach black olive triangles for eyes and a mouth using toothpicks to create a Jack-o'-lantern face. Serve with chips, crackers, and/or crudites.

Notes
