Ingredients
  

For the Soup
  • 1 lb boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 can diced tomatoes undrained, 14.5 ounce
  • 1 can chicken broth 14.5 ounce
  • 1 cup heavy cream
  • 1 package refrigerated cheese tortellini 19 ounce
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt or to taste

  • fresh parsley chopped

Method
 

  1. Place chicken, diced tomatoes (with juice), and chicken broth in your slow cooker. Stir in basil, oregano, garlic powder, pepper, and salt.
  2. Cover and cook on low for 4 hours or on high for 2 hours, until chicken is cooked through.
  3. Remove chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker.
  4. Stir in the heavy cream and Parmesan cheese. Add the tortellini and cook for an additional 15 minutes, or until the tortellini is tender.
  5. Taste and adjust seasonings if needed. Serve hot, garnished with fresh parsley if desired.

Notes

For a thicker soup, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the soup during the last 15 minutes of cooking. This soup is best served immediately after it's made.
