- Place chicken, diced tomatoes (with juice), and chicken broth in your slow cooker. Stir in basil, oregano, garlic powder, pepper, and salt.
- Cover and cook on low for 4 hours or on high for 2 hours, until chicken is cooked through.
- Remove chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker.
- Stir in the heavy cream and Parmesan cheese. Add the tortellini and cook for an additional 15 minutes, or until the tortellini is tender.
- Taste and adjust seasonings if needed. Serve hot, garnished with fresh parsley if desired.

Notes
For a thicker soup, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the soup during the last 15 minutes of cooking. This soup is best served immediately after it's made.
