Slow Cooker White Chicken Chili

Ingredients
  

For the Chili
  • 2 lbs boneless, skinless chicken breasts
  • 2 cans cannellini beans rinsed and drained
  • 1 can diced green chilies undrained
  • 1 cup chicken broth
  • 1 packet taco seasoning
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Optional Toppings
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sour cream

Method
 

  1. Place chicken breasts in the slow cooker.
  2. Add cannellini beans, diced green chilies (with liquid), chicken broth, taco seasoning, cumin, salt, and pepper to the slow cooker.
  3. Stir to combine.
  4. Cover and cook on low for 4 to 6 hours, or on high for 2 to 3 hours, until chicken is cooked through.
  5. Remove chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker.
  6. Stir the chili and let it simmer for another 60 minutes on low, uncovered, to allow flavors to meld.
  7. Serve hot, garnished with your favorite toppings.

Notes

You can substitute chicken thighs for chicken breasts if desired. Adjust seasoning to your taste.
