- In a bowl, toss the chicken pieces with hot sauce, melted butter, garlic powder, and smoked paprika until evenly coated.
- Heat a large skillet over medium-high heat. Add the coated chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and slightly caramelized.
- Remove the skillet from heat and let the chicken rest for about 10 minutes. This allows the flavors to meld.
- Lay out the large lettuce leaves. Spoon the buffalo chicken mixture into the center of each leaf.
- Drizzle with ranch dressing and top with shredded cheddar cheese and diced celery, if using.
- Fold the lettuce leaves to create wraps and serve immediately.
