Ingredients
  

For the Buffalo Chicken
  • 1 pound chicken breast cut into bite-sized pieces
  • 1/4 cup hot sauce your favorite brand
  • 2 tablespoons butter melted
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
For the Wraps
  • 2 large lettuce leaves such as romaine or butter lettuce
  • 1/4 cup ranch dressing keto-friendly
  • 1/4 cup shredded cheddar cheese optional
  • 1/4 cup diced celery optional

Method
 

  1. In a bowl, toss the chicken pieces with hot sauce, melted butter, garlic powder, and smoked paprika until evenly coated.
  2. Heat a large skillet over medium-high heat. Add the coated chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and slightly caramelized.
  3. Remove the skillet from heat and let the chicken rest for about 10 minutes. This allows the flavors to meld.
  4. Lay out the large lettuce leaves. Spoon the buffalo chicken mixture into the center of each leaf.
  5. Drizzle with ranch dressing and top with shredded cheddar cheese and diced celery, if using.
  6. Fold the lettuce leaves to create wraps and serve immediately.

Notes
