Method
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
- Prepare the chicken breasts: Place each chicken breast on a cutting board. Carefully slice a pocket into the thickest side of each breast, being careful not to cut all the way through.
- Make the filling: In a medium bowl, combine the wilted spinach, softened cream cheese, grated Parmesan cheese, minced garlic, salt, and pepper. Mix until well combined.
- Stuff the chicken: Spoon the spinach and cheese mixture evenly into the pockets of the chicken breasts. Secure the opening with toothpicks if needed.
- Season the chicken: Rub the outside of each stuffed chicken breast with olive oil. Season with salt and pepper.
- Bake the chicken: Place the stuffed chicken breasts in the prepared baking dish. Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Rest and serve: Let the chicken rest for a few minutes before serving. Remove toothpicks before serving.
Notes
You can add other cheeses like mozzarella or provolone to the filling. Serve with your favorite side dishes.
