Stuffed Spinach Chicken Breast

A simple recipe for chicken breasts stuffed with spinach and cheese.

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts about 6 oz each
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Filling
  • 5 oz fresh spinach wilted and squeezed dry
  • 4 oz cream cheese softened
  • 1/4 cup Parmesan cheese grated
  • 1 clove garlic minced
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Prepare the chicken breasts: Place each chicken breast on a cutting board. Carefully slice a pocket into the thickest side of each breast, being careful not to cut all the way through.
  3. Make the filling: In a medium bowl, combine the wilted spinach, softened cream cheese, grated Parmesan cheese, minced garlic, salt, and pepper. Mix until well combined.
  4. Stuff the chicken: Spoon the spinach and cheese mixture evenly into the pockets of the chicken breasts. Secure the opening with toothpicks if needed.
  5. Season the chicken: Rub the outside of each stuffed chicken breast with olive oil. Season with salt and pepper.
  6. Bake the chicken: Place the stuffed chicken breasts in the prepared baking dish. Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  7. Rest and serve: Let the chicken rest for a few minutes before serving. Remove toothpicks before serving.

Notes

You can add other cheeses like mozzarella or provolone to the filling. Serve with your favorite side dishes.
