Ingredients
  

For the Salad
  • 1 pound green beans trimmed
  • 1/2 head radicchio sliced into strips
  • 1/4 cup red onion thinly sliced
  • 2 ounces goat cheese crumbled
  • 2 tablespoons walnuts chopped
  • 2 tablespoons almonds sliced
  • 1/4 cup tarragon fresh leaves
  • to taste flaky sea salt
For the Dressing
  • scant cup Honey Mustard Dressing for drizzling

Equipment

  • Large pot
  • Bowl
  • Paper towels
  • Platter

Method
 

  1. Bring a large pot of salted water to a boil and set a bowl of ice water nearby. Drop the green beans into the boiling water and blanch for 2 minutes.
  2. Remove the beans and immediately immerse in the ice water long enough to cool completely, about 15 seconds. Drain and place on paper towels to dry.
  3. Transfer the beans to a bowl and toss with the radicchio, red onion, and a few spoonfuls of the dressing.
  4. Arrange on a platter and top with small dollops of goat cheese, the walnuts, almonds, and tarragon. Drizzle with more dressing, season to taste with flaky salt, and serve.

Notes

This salad can be partially prepared ahead of time. Blanch the green beans and prepare the dressing up to a day in advance. Store them separately in the refrigerator. Assemble just before serving for the freshest taste.
