Ingredients
  

For the Veggie Tray
  • 1 baby romaine lettuce
  • 1 stalk celery sliced into 3-inch pieces
  • 1 english cucumber sliced
  • 1 red bell pepper sliced
  • 8 ounces carrots sliced
  • 1-2 cups black olives
For the Turkey Dip
  • 1 cup dill dip
  • 1 yellow bell pepper
  • 1 mini yellow pepper
  • 2 candy eyes
  • 2 baby carrots

Equipment

  • Large oval or circle platter
  • Bowl for dip

Method
 

  1. Wash all vegetables and slice them. Allow them to air dry. Gather a large oval or circle platter and place a bowl for the veggie dip in the bottom center.
  2. Create the turkey face and body. Cut the bottom off the yellow bell pepper and place it at the top of the dip bowl. Add two candy eyes on top. Cut a small sliver from a red bell pepper for the beak. Slice the mini yellow pepper in half for the wings. Slice a baby carrot in half and carve out feet, then place these onto the bottom of the dip bowl.
  3. Add the turkey feathers. Start at the top of the platter and arrange the baby romaine lettuce all around. Layer the sliced celery and cucumber next.
  4. Add the remaining vegetables. Place the sliced red bell pepper and baby carrots on the platter. Arrange the black olives at the bottom of the platter. Serve.

Notes

This veggie tray is a quick and healthy option for any holiday gathering. You can prepare the vegetables ahead of time and assemble the tray just before serving.
