- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the diced bacon and chopped onion over medium heat until the bacon is crisp. Drain off any excess fat.
- In a large bowl, combine the eggs, thawed hash brown potatoes, cheddar cheese, cottage cheese, and Swiss cheese. Stir well to combine.
- Stir the cooked bacon and onion mixture into the bowl with the other ingredients.
- Transfer the mixture to a greased 13x9-inch baking dish.
- Bake, uncovered, for 35-40 minutes, or until a knife inserted into the center comes out clean.
- Let the casserole stand for 10 minutes before cutting and serving.
