Ingredients
  

For the Sandwich
  • 1 english muffin cut in half
  • 2 eggs
  • 2-4 slices ham black forest or any kind
  • 1/3 cup finely shredded cheese Mexican cheese recommended
  • 1 tsp chives finely chopped
  • Salt and Pepper to taste
  • 1 Tbsp olive oil or butter to saute

Equipment

  • Toaster
  • Skillet

Method
 

  1. Toast the english muffin.
  2. Heat olive oil or butter in a skillet over medium heat.
  3. Crack the eggs into the skillet. Cook until set, then season with salt and pepper.
  4. Place the ham and cheese over the eggs. Cover for 1-2 minutes, or until the cheese is melted.
  5. Assemble the sandwich: place the egg and cheese mixture on one half of the english muffin, sprinkle with chives, and top with the other half of the muffin.

Notes

To make 2 sandwiches at a time, toast the English muffin in the toaster and sauté two sets of eggs in the pan.
