Method
- Toast the english muffin.
- Heat olive oil or butter in a skillet over medium heat.
- Crack the eggs into the skillet. Cook until set, then season with salt and pepper.
- Place the ham and cheese over the eggs. Cover for 1-2 minutes, or until the cheese is melted.
- Assemble the sandwich: place the egg and cheese mixture on one half of the english muffin, sprinkle with chives, and top with the other half of the muffin.
Notes
To make 2 sandwiches at a time, toast the English muffin in the toaster and sauté two sets of eggs in the pan.
