- In a small bowl, combine the shredded manchego cheese, mayonnaise, and onion powder. Mix well.
- Spread 1 tablespoon of softened butter on one side of each slice of sourdough bread.
- On the unbuttered side of two bread slices, layer the brie cheese, followed by the sharp white cheddar, Monterey jack, and gruyere cheeses.
- Spread the manchego cheese mixture evenly over the cheese layers on both sandwiches.
- Top each sandwich with the remaining two slices of bread, butter-side up.
- Heat a large skillet or griddle over medium heat. Place the sandwiches on the hot skillet.
- Cook for 4-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
- Remove from skillet, let cool slightly, and serve immediately.
Notes
For an extra crispy crust, you can use a combination of butter and mayonnaise on the outside of the bread. Experiment with different cheese combinations to find your favorite melty blend!
