Ingredients
  

For the Sandwich
  • 8 slices sourdough bread
  • 6 tablespoons butter softened, divided
  • 3 tablespoons mayonnaise
For the Cheese Filling
  • 3 tablespoons manchego cheese finely shredded
  • 1/8 teaspoon onion powder
  • 4 ounces brie cheese rind removed
  • 1/2 cup sharp white cheddar cheese shredded
  • 1/2 cup Monterey jack cheese shredded
  • 1/2 cup gruyere cheese shredded

Equipment

  • Large skillet or griddle
  • Spatula
  • Butter knife

Method
 

  1. In a small bowl, combine the shredded manchego cheese, mayonnaise, and onion powder. Mix well.
  2. Spread 1 tablespoon of softened butter on one side of each slice of sourdough bread.
  3. On the unbuttered side of two bread slices, layer the brie cheese, followed by the sharp white cheddar, Monterey jack, and gruyere cheeses.
  4. Spread the manchego cheese mixture evenly over the cheese layers on both sandwiches.
  5. Top each sandwich with the remaining two slices of bread, butter-side up.
  6. Heat a large skillet or griddle over medium heat. Place the sandwiches on the hot skillet.
  7. Cook for 4-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
  8. Remove from skillet, let cool slightly, and serve immediately.

Notes

For an extra crispy crust, you can use a combination of butter and mayonnaise on the outside of the bread. Experiment with different cheese combinations to find your favorite melty blend!
