Turkey and Crunchy Veggie Wraps

Ingredients
  

For the Wraps
  • 2 whole wheat tortillas
  • 4 oz sliced turkey breast
  • 2 tbsp hummus
  • 1/2 cup shredded lettuce
  • 1/4 cup shredded carrots
  • 1/4 cup thinly sliced cucumber
  • 1/4 cup thinly sliced bell pepper any color

Equipment

  • Cutting board

Method
 

  1. Lay out the tortillas flat.
  2. Spread 1 tablespoon of hummus evenly over each tortilla.
  3. Layer the sliced turkey breast over the hummus.
  4. Top the turkey with shredded lettuce, carrots, cucumber, and bell pepper.
  5. Fold in the sides of each tortilla, then tightly roll them up from the bottom.
  6. Slice in half if desired and serve immediately.

Notes

You can add other vegetables like spinach, red onion, or sprouts. For a different flavor, try mustard or a light vinaigrette instead of hummus.
