- Heat olive oil in a large skillet over medium heat. Add ground turkey, and cook until meat is browned and crumbly, 4 to 5 minutes.
- Add zucchini, bell pepper, and onion. Stir occasionally and cook until the veggies are tender, about 5 to 6 minutes. Stir in garlic and cook until fragrant, about 30 seconds.
- Stir in black beans, tomatoes, potatoes, basil, and thyme. Season with salt and pepper. Reduce heat and simmer for about 5 minutes. Add a little water if it becomes too thick.
- Garnish with parsley and red pepper flakes, and serve.

This recipe is adaptable. Feel free to substitute other vegetables you have on hand. For a spicier dish, add more red pepper flakes.
