Ingredients
  

For the Skillet
  • 1 tablespoon olive oil
  • 1 pound 93% lean ground turkey
  • 2 zucchini, quartered lengthwise and sliced 3/4-inch thick
  • 1 bell pepper
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15.25 ounce) can black beans, undrained
  • 1 (14.5 ounce) can fire roasted tomatoes, undrained
  • 1 (14 1/2 ounce) can new potatoes, drained and rinsed
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • to taste salt and freshly ground black pepper
For Garnish (Optional)
  • chopped fresh parsley
  • sprinkle of red pepper flakes

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add ground turkey, and cook until meat is browned and crumbly, 4 to 5 minutes.
  2. Add zucchini, bell pepper, and onion. Stir occasionally and cook until the veggies are tender, about 5 to 6 minutes. Stir in garlic and cook until fragrant, about 30 seconds.
  3. Stir in black beans, tomatoes, potatoes, basil, and thyme. Season with salt and pepper. Reduce heat and simmer for about 5 minutes. Add a little water if it becomes too thick.
  4. Garnish with parsley and red pepper flakes, and serve.

Notes

This recipe is adaptable. Feel free to substitute other vegetables you have on hand. For a spicier dish, add more red pepper flakes.
