Ingredients
  

For the Tots
  • 10 oz frozen cauliflower rice cooked until dry
  • 1 cup cottage cheese full-fat recommended, blended until smooth
  • 1/4 cup shredded mozzarella cheese packed
  • 1 tablespoon grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt

  • Non-stick skillet
  • Blender or food processor

Method
 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Heat a non-stick skillet over medium heat. Add the frozen cauliflower rice to the dry skillet. Cook, stirring occasionally, until most of the moisture has evaporated and the cauliflower rice is fluffy. Remove from heat and set aside.
  3. While the cauliflower rice is cooking, place the cottage cheese in a blender or food processor. Blend until it is smooth and creamy.
  4. In a large bowl, combine the cooked cauliflower rice, blended cottage cheese, mozzarella cheese, parmesan cheese, garlic powder, and salt. Mix well.
  5. Scoop about 1 tablespoon of the cauliflower mixture and shape it into a tater tot. Place each tot on the prepared baking sheet, leaving about ½ inch of space between them.
  6. Bake for 27-30 minutes, or until the tots are golden brown. Let them cool for a few minutes before serving.

Notes

These cottage cheese tots are a versatile snack. You can enjoy them plain or with your favorite dipping sauce. They are a great option for meal prep and can be stored in the refrigerator for a few days.
