Ingredients
  

For the Pizza
  • 1 large watermelon about 10-12 inches in diameter, sliced into 1-inch thick rounds
For the Topping
  • 8 oz cream cheese softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups mixed berries such as strawberries, blueberries, raspberries

Method
 

  1. Cut the watermelon into 1-inch thick rounds. Pat the watermelon slices dry with paper towels.
  2. In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  3. Spread the cream cheese mixture evenly over the watermelon rounds.
  4. Arrange the mixed berries on top of the cream cheese layer.
  5. Chill the fruit pizza in the refrigerator for at least 30 minutes before serving.

Notes

You can add other fruits like kiwi, grapes, or mango. For a different flavor, you can add a little lemon zest to the cream cheese mixture.
