Ingredients
  

For the Chia Pudding
  • 1/2 cup chia seeds
  • 2 cups watermelon juice from about 4 cups of cubed watermelon
  • 2 tablespoons maple syrup or to taste
For the Fruit Layers
  • 1 cup fresh berries such as blueberries, raspberries, or strawberries
  • 1 cup diced fresh watermelon
  • 1/2 cup diced cantaloupe or honeydew melon

Method
 

  1. Prepare the chia pudding: In a bowl, whisk together the watermelon juice, chia seeds, and maple syrup. Let it sit for 5 minutes, then whisk again to break up any clumps.
  2. Cover the bowl and refrigerate for at least 2 hours, or until the mixture has thickened into a pudding consistency. Stir occasionally during the first hour.
  3. Assemble the parfaits: In serving glasses, layer the chia pudding with fresh berries and diced watermelon and melon.
  4. Repeat the layers until the glasses are full. You can finish with a layer of berries or a small slice of watermelon on top.
  5. Serve immediately or chill for a short time before serving.

Notes

You can adjust the sweetness of the chia pudding to your preference. Feel free to add other fruits like kiwi or mango for variation.
