- Prepare the chia pudding: In a bowl, whisk together the watermelon juice, chia seeds, and maple syrup. Let it sit for 5 minutes, then whisk again to break up any clumps.
- Cover the bowl and refrigerate for at least 2 hours, or until the mixture has thickened into a pudding consistency. Stir occasionally during the first hour.
- Assemble the parfaits: In serving glasses, layer the chia pudding with fresh berries and diced watermelon and melon.
- Repeat the layers until the glasses are full. You can finish with a layer of berries or a small slice of watermelon on top.
