Method
- Combine the cubed watermelon, coconut milk, lime juice, and optional honey or maple syrup in a blender.
- Blend until smooth. If you prefer a smoother texture, you can strain the mixture through a fine-mesh sieve.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert popsicle sticks and freeze for at least 4-6 hours, or until solid.
- To unmold, run the popsicle molds under warm water for a few seconds.
Notes
You can add small pieces of fruit like berries or finely chopped mint to the molds before freezing for extra texture and flavor.
