Watermelon Coconut Lime Popsicles

These refreshing watermelon, coconut, and lime popsicles are a perfect treat for kids on a hot day.

Ingredients
  

For the Popsicles
  • 4 cups seedless watermelon cubed
  • 1/2 cup full-fat coconut milk from a can
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey or maple syrup optional, adjust to taste

Equipment

  • Blender
  • Popsicle molds

Method
 

  1. Combine the cubed watermelon, coconut milk, lime juice, and optional honey or maple syrup in a blender.
  2. Blend until smooth. If you prefer a smoother texture, you can strain the mixture through a fine-mesh sieve.
  3. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  4. Insert popsicle sticks and freeze for at least 4-6 hours, or until solid.
  5. To unmold, run the popsicle molds under warm water for a few seconds.

Notes

You can add small pieces of fruit like berries or finely chopped mint to the molds before freezing for extra texture and flavor.
