Ingredients
  

For the Salad
  • 6 cups watermelon cubed
  • 1 cup feta cheese crumbled
  • 1/2 cup fresh mint leaves chopped
  • 1/4 cup red onion thinly sliced
For the Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. In a large bowl, combine the cubed watermelon, crumbled feta cheese, chopped mint leaves, and thinly sliced red onion.
  2. In a small bowl, whisk together the olive oil, lime juice, honey, salt, and black pepper until well combined.
  3. Pour the dressing over the watermelon mixture and gently toss to coat.
  4. Serve immediately or chill for later.

Notes

You can add other ingredients like cucumber or avocado if desired. This salad is best served fresh.
