Watermelon Mint and Feta Salad

Ingredients
  

Salad
  • 4 cups Seedless watermelon cubed
  • 1 cup Feta cheese crumbled
  • 1/2 cup Fresh mint leaves chopped
  • 1/4 cup Red onion thinly sliced
Dressing
  • 3 tablespoons Olive oil
  • 2 tablespoons Lime juice
  • 1 teaspoon Honey
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black pepper

Method
 

  1. In a large bowl, combine the cubed watermelon, crumbled feta cheese, chopped mint, and sliced red onion.
  2. In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper to make the dressing.
  3. Pour the dressing over the watermelon mixture and gently toss to combine.
  4. Serve immediately or chill for later.

Notes

For a spicier kick, add a pinch of red pepper flakes to the dressing. You can also add other ingredients like cucumber or avocado.
