Ingredients

  • 4 cups seedless watermelon diced
  • 1 red onion finely chopped
  • 1 jalapeño seeded and finely chopped
  • 1/2 cup fresh cilantro chopped
  • 1/4 teaspoon salt or to taste

Method
 

  1. In a large bowl, combine the diced watermelon, chopped red onion, chopped jalapeño, and chopped cilantro.
  2. Squeeze the juice of one lime over the mixture.

  4. Gently toss all ingredients to combine.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
