- Preheat your oven to 350°F (175°C). Grease and flour a 10-inch fluted or plain tube pan.
- In a large bowl, cream together the softened butter and sugar until the mixture is light and fluffy, which should take about 5-7 minutes. Add the eggs one at a time, making sure to beat well after each addition. Stir in the lemon juice and vanilla extract.
- Gradually add the flour to the butter mixture, alternating with the 7UP soda. Beat well after each addition until just combined. Be careful not to overmix.
- Pour the batter into the prepared pan and spread it evenly. Bake for 65-75 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let the cake cool in the pan for 20 minutes before inverting it onto a wire rack to cool completely.
- To make the glaze, combine the confectioners' sugar and lemon juice in a small bowl. Add enough 7UP soda, a tablespoon at a time, until you reach your desired consistency. If you like, stir in the lemon or lime zest.
- Once the cake has cooled completely, drizzle the glaze over the top.
